A delicious Greek dish, full of flavour
This is a very tasty recipe, perfect for a nice dinner. It is quite easy to put together and doesn’t require too much preperation.

Ingredients
- 2 whole mackerel, cleaned and oven ready
- 3 cloves of garlic
- 3tbsp capers
- 3tbsp/handful of olives
- 2tbsp plain flour
- 2tbsp olive oil
- 1 brown onion
- 1 can chopped tomatoes (400g)
- 1tsp sugar
- 1tsp cayenne pepper
- parsley to garnish
- salt and pepper to taste
We served the fish with some bulgur wheat but the fish can also be served with some potatoes, a simple salad or some greens.
Step by Step Instructions
Step 1
First, rinse the fish briefly. Pat dry, then place onto a plate, and season with salt and pepper and cover with the flour on both sides.
Step 2
Add 1tbsp of the olive oil into a pan on medium heat. Shake off any excess flour, then add the fish to the pan. Cook on medium heat for around 3 minutes on each side, until slightly brown.
Step 3
Whilst the fish is cooking, prep the other ingredients: peel and dice the onion, peel the garlic cloves, and remove pits from olives if not already pitted. Drain the capers, then rinse briefly and drain again. Set aside.
Remove the fish and place into an oven dish.
Step 4
Add the remaining olive oil to the pan, then when heated, add the onion, and using the garlic press crush the garlic to the pan. Mix well, then cook for 5 minutes on medium heat.
Step 5
Next, add the capers, olives and chopped tomatoes to the pan. Add the cayenne pepper, sugar, salt and pepper, mix well and cook for 10 minutes on medium heat. Preheat the oven to 180 degress.
Step 6
Pour the sauce over the fish. Roast for 30 minutes.
Step 7
The fish will be cooked by now and is ready to serve. Garnish with some parsley.
