Teriyaki Tofu patties, brocoli and rice dish

Delicious vegetable and tofu patties

This is a simple dish, perfect for a quick mid-week dinner. The tofu patties are easy to cook, and go well alongside the teriyaki sauce. This is also a completely vegan dish.

Ingredients

  • 200g firm tofu
  • 30g panko breadcrumbs
  • 3tbsp vegetable oil
  • 3 dried shitake mushrooms
  • 3tbsp sesame seeds
  • 2 garlic cloves
  • 2 spring onions
  • 2tbsp light soy sauce
  • 1tbsp mirin
  • 1tbsp ketchup
  • 1.5 tbsp sugar
  • 1tbsp ginger
  • 1 medium-sized carrot
  • 1 medium broccoli
  • 1 cup of rice
  • 1tbsp miso
  • 1/2tbsp yuzu
  • 1/2tbsp sesame oil
  • 1/2tsp cornflour

The tofu patties can be served alongside other vegetables- you can swap the broccoli for courgette for example, or peppers.

 

 

Step by Step Instructions

Step 1

First, prepare the vegetables: peel and dice the carrot, peel and grate the garlic and ginger, slice the spring onions. Crumble the tofu.

Place the dried mushroom in a small bowl and pour over boiling water to rehydrate. Set aside for around half an hour. After the 30 minutes, take the mushrooms out of the water (set aside the water), and chop. Add all the vegetables to a bowl, and add 1btsp of the sesame seeds.

Mix all the vegetables together, then add salt and pepper.  Let the mixture sit for 5-10 minutes, in the meantime you can make the sauce. Cook the rice as per pack instructions.

Make the teriyaki sauce: in a small saucepan combine the soy sauce, with 1tbsp of the sugar, mirin and ketchup. Add in 2 tbsp of the water from the mushrooms and mix well. Heat gently on medium heat, stirring occasionally. Make up the cornflour slurry (combine the cornflour with a bit of water), then add to the saucepan to thicken the sauce. Remove from the sauce once thickened.

Step 4

 Next, make the tofu patties: shape the mixture into several small patties. Heat 2tbsp of the oil in a pan and then add the patties, cooking them on each side for a few minutes until brown.

 Once the patties are golden on each side, set aside and place on a plate lined with a paper towel to absorb excess oil.

Step 6

At the same time, prepare the broccoli (cut into florets), and cook on an oiled grilled pan, turning occasionally.

Make up the sauce for the broccoli: combine the remaining sugar, 1tbsp of sesame seeds, yuzu, sesame oil and miso. Mix the sauce well and set aside. 

Step 8

 Once the tofu patties are cooked, the dish is ready to plate up. Pour over the teriyaki sauce over the patties, and the sesame sauce over the broccoli florets. Sprinkle over remaining sesame seeds. Enjoy!
