A simple yet delicious spring salad
This salad is very easy to put together, full of fresh herbs and vegetables. It is perfect with a roast or as a side dish, and can be prepared in advance of serving.

Ingredients
- 750g baby new potatoes
- 200g aspraragus
- 100g fresh peas
- 100g radishes
- 1 red onion
- 1 pack of fresh dill
- 1/2 pack of fresh chives
- 1 pack of fresh parsley
- 1/2 lemon
- 5tbsp olive oil
- salt and pepper
Feel free to use other vegetables here or other herbs, based on personal preferences or what you have available.
We used fresh peas here, but you can also use frozen peas and tweak cooking time accordingly.
Step by Step Instructions
Step 1
First, pre-heat the oven to 200 degrees C. Prepare the potatoes: wash, and quarter them. Add the potatoes to a roasting tray, add salt, pepper and 2 tbsp of olive oil. Mix well. Roast for 25-30 minutes.
Step 2
Next, prepare the herbs and onion: peel and chop the onion, and finely chop the herbs (chives, dill and parsley) . Put everything into a big bowl.
Step 3
Next, chop the asparagus into inch-size pieces. Cook the asparagus and the peas in boiling water for around 4 minutes- once cooked, drain and add to cold water to stop the cooking process. Let cool completely.
Step 4
Once the peas and asparagus are cooled, add to the bowl with the herbs.
Next, wash and thinly slice the radish, combine with the other ingredients.
Step 5
Once the potatoes are cooked, remove from the oven, set aside and let cool.
Step 6
Once the potatoes are cooled, add to the bowl, alongside the juice of half of a lemon and remaining olive oil. Add salt and pepper to taste. Mix everything well.
The salad is now ready to serve. Enjoy!
