Spicy Korean Barbecued Chicken

Delicious, spicy and crispy chicken wings- you will definitely want more!

Coated in a tasty sauce, this dish is relatively straight forward to put together, requires little prep but does need some marinating -hence the long prep time below.

Ingredients
  • 500g chicken wings
  • 200ml milk
  • 2 cloves of garlic
  • 2tbsp gochujang
  • 2tbsp caster sugar
  • 1.5tbsp sesame oil
  • 1tbsp gochugaru
  • 1 spring onion
  • 1/2 thumb of ginger
  • salt and pepper to taste

In this recipe we use chicken wings, but you can also use chicken thighs or drumsticks- just adjust the cooking time appropriately and make sure the meat is fully cooked.

We marinaded the chicken for 30 minutes in milk (to tenderise it), then a further 30 minutes in the marinade itself. For the second marinade, we would suggest at least 30 minutes, but preferably longer and overnight if possible.

This recipe services two to four people as part of  several dishes.

 

Step by Step Instructions

Step 1

First, the chicken needs to be marinated in milk. Place the chicken into a bowl, and pour in the milk, then mix with your hands. Set aside for around 30 minutes at room temperature.

Meanwhile, prep the ingredients for the marinade: slice the spring onion and add to a bowl.

Next, crush the garlic and peeled ginger into the bowl, alongside the gochujang, gochugaru, sugar and sesame oil. Add salt and pepper to taste.

Mix the marinade ingredients together- you should get a thick paste.

After the chicken has marinated for 30 minutes in the milk, drain the chicken, then into the same bowl add the marinade. Mix with your hands again to ensure all the chicken pieces are covered with the marinade.

Cover the chicken, and let marinade for at least another 30 minutes, preferably longer or overnight.

Step 7

Finally, the chicken is ready to cook- we cooked ours on the barbecue for around 15 minutes, turning part way through to ensure even cooking. The skin should become crispy and and the chicken juicy.
