A classic winter side dish, with a hint of spices

This is a simple recipe, with not too much prep but a fair bit of cooking time-but worth the wait! This certainly makes for a perfect festive accompaniment.

Ingredients
  • medium red cabbage
  • 150ml red wine vinegar
  • 150g brown sugar
  • 2 star anise
  • 1 cinnamon stick

Some red cabbage recipes may use apples- feel free to add these in (just use peeled and chopped cooking apples) alongside the cabbage early on.

This recipe can be made in advance- just let it cool, then store in the fridge for several days prior  or a couple of months in the freezer. Reheat on low heat.

 

 

Step by Step Instructions

Step 1

First, finely shred the red cabbage, and add to a large pan on medium heat.

Next, into the pan add the red wine vinegar and brown sugar. Stir everything together.

Next, add the cinnamon stick and the star anise, bring to the boil, then cover and reduce the heat to low-medium. Cook for 90 minutes.

Stir the cabbage occasionally, and after 90 minutes it should be soft and tender. The cabbage is then ready to serve. Enjoy!
