A simple yet impressive and delicious dish
This dish takes some influence from some of the dishes we had during a recent trip to Crete- grilled octopus on a fava bean puree. We have swapped the octopus for Sea Bass as it is much easier to find in supermarkets, but the dish works just as well, and makes for a great mid-week dinner.

Ingredients
- 1cup (170g) dried split fava beans
- 1 small onion
- 2 bay leaves
- 3 allspice berries
- 5tbsp olive oil
- 1tbsp dried oregano
- 2 sea bass fillets
- 1 lemon
- 1/2 pack fresh coriander
- salt and pepper to taste
You can swap the sea bass for grilled octopus (as it was served in Crete), or even prawns or squid. Just adjust the cooking time accordingly.
Step by Step Instructions
Step 1
First, rinse the fava beans to remove the excess starch, drain and set aside.
Step 2
Peel and dice the onion. Then, heat 1tbsp of the olive oil in a pan over medium heat, add the chopped onion and cook, stirring occasionally for 5 minutes.
Step 3
Next, place the fava beans into the pot, alongside 4 cups of water (around 950ml). Add the bay leaves, all spice berries, salt and pepper, and bring to a boil.

Once boiling, reduce the heat slightly to medium-high and cook for a further 60 minutes, until the beans absorb all the water and become soft.
Step 5
Just before the beans are ready, you can cook the sea bass. First, remove from packaging and season on both sides.
Step 6
Heat 1btsp of olive oil in a shallow frying pan on medium heat, then add the sea bass and cook on each side for 3 minutes.
Step 7
Meanwhile, finely chop the coriander and add to a bowl. Cut the lemon in half, then squeeze one lemon half into the bowl, and add 2tbsp of olive oil. Mix well.
Step 8
Once the fava beans are cooked and are mushy (you may want to blend them or mash them a bit more by hand to get them a bit more creamy), remove the bay leaves and all spice berries, add the remaining olive oil, dried oregano, squeeze in the juice from the remaining lemon half and mix well.
Step 9
The dish is now ready to serve. First, spoon on the fava bean puree onto a plate, place on top the sea bass fillet, and top with the herby mixture. Enjoy!
