Roasted Sprouting Broccoli & Pearl Couscous with Green Tahini

A simple and delicious salad that’s quick to prepare and eat!

 

You might want to prepare the green tahini sauce in advance, you can freeze it easily or re-use it for another dish very easily. (if refrigerated, make sure you add a bit of extra water and stir it before hand!)

Ingredients

  • 300g Broccoli
  • 150g Pearl Couscous (measured dried, yields double)
  • 1 or 2 tbsp vegetable oil (for cooking)
  • 1 tsp sesame seeds (for garnish)

For the dressing:

  • 1/2 lemon, juiced
  • 2 tbsp Olive oil
  • 2 tbsp Tahini
  • 1 Garlic clove
  • 1 Bunch of parsley
  • 4 tbsp Water (or more depending on desired consistency)

Recipe Notes:

You can use any kind of Broccoli for this recipe. We had sprouting broccoli on hand which is what we used, but purple broccoli or even Romanesco cauliflower would work. You want a veg that will balance out the color of the couscsous. If you want to go further with the idea, you could adapt this and swap the broccoli for roasted tomatoes, or a mix of carrots and other colourful vegetables!

This is a perfect recipe for meal prep or take with you for work, as it can easily be re-heated (provided you leave the sauce aside) or eaten cold in the summer months.

Step by Step Instructions

Step 1

Pre-heat your oven to 220C.

Meanwhile, cut down the broccoli in florets and lay it on a roasting tray, drizzling olive oil and salt on it.

Roast for 20 min, turning the florets halway or until each side is slightly charred.

Step 2

Prepare the dressing whilst the broccoli is roasting.

In a blender, add the garlic, tahini, olive oil, the parsley, salt and pepper and 1tbsp of water and blend until smooth. keep adding water to your desired consistency.

Alternatively you can use a mortar and pestle, start with the garlic, then add the tahini and olive oil.

Step 3

The pearl couscous can either be boiled or prepared like traditional couscous. This means either boiling with water until the couscous has absorbed the water (use a 1:2 ratio between Couscous and Water) or add the Couscous in a bowl and pour boiling water on it, covering for about 15min.

If you want to impart more flavour you can use stock cube or spices to the water to give it more taste.

Step 4

Once the broccoli is ready, you can mix it with the couscous, pour the dressing on top, add the sesame seeds if using and serve as is!
