A delicious combination of squid and chorizo upgrades a simple potato dish
This is a straight forward recipe which makes for an impressive dinner and doesn’t take too long to put together. This works well as part of a tapas dinner or party, or a quick mid-week dinner.

- 400g baby new potatoes
- 100g cooking chorizo
- 2 squid
- 1 lemon
- 1tbsp olive oil
- 1/2 red onion
- 1/2 pack fresh parsley
- salt and pepper to taste
Ideally try to get some prepared squid- otherwise you’ll need to prepare and clean it yourself prior to using in the recipe.
Otherwise you can buy squid rings, or use prawns or octopus instead.
Step by Step Instructions
Step 1
First, wash and scrub the potatoes, halve, and boil for 10-15 minutes. Then, drain and set aside.
Step 2
Next, heat the olive oil in a pan. Add the cooked potatoes and fry for a couple of minutes on medium-high heat.
Meanwhile, slice the red onion, and cut the chorizo into chunks.
Step 3
Add the chorizo and red onion to the pan, stir everything and cook for a further couple of minutes- the chorizo should release its fat, and the potatoes should start to crisp up.
Step 4
Prepare the squid: remove the tentacles from the body, then cut the body into rings. Set aside.
Roughly chop the parsley, and quarter the lemons.
Step 5
Add the lemon pieces and the squid (including the tentacles) to the pan. Cook for 2-3 minutes, stirring occasionally.
Step 6
Sprinkle over a third of the parsley, add salt and pepper to taste, mix and then take of the heat.
Step 7
The dish is now ready to serve. Transfer to a serving plate and sprinkle over the remaining parsley. Enjoy!
