Polenta bowl with roasted vegetables

A combination of creamy, cheesy polenta and roasted vegetables make for a very tasty dish!

This recipe is very versatile and quite straight forward- great for a mid-week dinner. The vegetables can be changed to suit your preferences or what you have available in the fridge- and whilst this is a vegetarian recipe, you can always add some meat or fish if you wish.

Ingredients

  • 100g polenta
  • 150g baby tomatoes
  • 50g parmesan
  • 1 bell pepper
  • 1/2 cauliflower
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tbsp sumak
  • 1 tbsp sweet red pepper
  • salt and pepper

 

We used organic polenta and according to the pack this only needs 2 minutes cooking time- so the recipe below assumes you are using similar polenta. Do check the instructions on your packaging though to make sure you cook the polenta properly.

We used whatever ingredients we had in the fridge for this recipe- but you can tweak these, and other vegetables would work as well- such as courgettes, aubergines, beetroot etc. You can similarly add some meat or fish, or even tofu to go alongside the vegetables. Basically- feel free to use this as a base and tweak the recipe accordingly!

 

Step by Step Instructions

Step 1

First, pre-heat the oven to 200 degrees C (390 degrees F). Then, prepare the vegetables: peel and slice the red onion, halve the cherry tomatoes, cut the cauliflower and peppers into bite-sized pieces. Add these to a mixing bowl.

Step 2

Into the bowl, add the sumak, sweet red pepper, and olive oil.

Mix the vegetables well, to ensure they are coated in the spices and the olive oil, then transfer into an oven dish. Roast for 30 minutes, giving them a mix half-way through to ensure even roasting.

Step 4

When there are 5 or so minutes left of roasting time, you can start to cook the polenta. Boil 400ml of water in a pan, then add the polenta whilst stirring, and whilst on medium heat.

Turn down the heat for the polenta. Then, grate the parmesan and add it to the polenta, then stir it in, slowly. Add salt and pepper to taste.

The vegetables should be cooked by now. Remove them from oven, and set aside.

The polenta should also be cooked by now. Spoon it into a bowl, then place the vegetables on top. Enjoy!
