Ingredients
- 320g all-butter puff pastry
- 100g ground almonds
- 500g fresh plums
- 4tbsp golden caster sugar
- 4tbsp almond flakes
This tart can be served with some scoops of ice cream on the side, or even custard. We used a mixture of plum varieties here, but you can use whatever plums you have to hand.
Step by Step Instructions
Step 1
First, around 20-30 minutes before cooking, remove the puff pastry from the fridge. Gather all the ingredients together and pre-heat the oven to 220 C (390 degrees F).
Step 2
Carefully remove the stones from the plums. We find the easiest way to do this is to twist along the diameter of the plum, then the stone can be removed.
Step 3
Slice the plum halves thinly.
Next, roll out the puff pastry, and cut around the dish you’ll be cooking the tart in- whether round or rectangular.
Step 4
Place the puff pastry into the tin/baking dish, and then start to arrange the plum slices on the pastry. We arranged it with each slice facing the same way, and a slight overlap, but you can be more creative. Sprinkle over the ground almonds between the plum slices and around the sides.
Step 5
Finally, sprinkle the almond flakes over the plums, followed by the sugar, making sure both are sprinkled evenly. Bake the tart for 35-40 minutes.
Step 6
Once the pastry rises and the sides are golden, the tart is ready to serve. Enjoy!
