Pan fried Jerusalem Artichokes

A delicious but very simple side dish

This is a great alternative to fried or roasted potatoes and is full of flavour. This dish makes for a great side dish and doesn’t need too much prep or too much time to put together.

Ingredients

  • 300g Jerusalem Artichoke 
  • 2tbsp olive oil
  • 2tbsp butter
  • few sprigs of fresh rosemary
  • Salt and pepper

If you don’t have fresh rosemary, you can use dried rosemary instead.

To make the dish fully vegan, swap the butter for an extra tablespoon of olive oil.

 

Step by Step Instructions

Step 1

First scrub the Jerusalem artichokes, then slice.

Step 2

Add the butter into a frying pan, then pour in the olive oil. Once heated, add the Jerusalem artichokes into the pan, add the rosemary sprigs and salt and pepper. Mix well, then cook for 15 minutes on medium heat, stirring occasionally.

The slices should start to become golden. Remove the slices, and place onto a place lined with a paper towel to soak excess oil.

The dish is now ready to plate up and serve.  Enjoy!
