A simple Japanese dish full of flavour
This dish doesn’t take too long to put together and makes for an easy but tasty dinner. The prep time includes some marinating time, but overall there is not too much cooking involved.

Ingredients
For the salmon:
- 1 salmon fillet
- 40g white miso
- 1tbsp mirin
- 1tbsp caster sugar
- 1tbsp water
- 1/4 tsp vinegar
For the broccoli:
- 1 broccoli head
- 2tbsp sesame seeds
- 2tbsp tahini
- 2tbsp mirin
- 2tbsp vinegar
- 1 1/2tbsp sesame oil
- 1 1/2tbsp vegetable oil
- 1 1/2tbsp caster sugar
- 1tbsp sweet soy sauce
- 1tsp garlic powder
- 1/2tsp white peppercorns
- 1 cup of rice to serve
Step by Step Instructions
Step 1
First- make the miso sauce for the salmon: in a small bowl, combine the miso, mirin, sugar and water, and mix until well combined.
Step 2
Pour the miso sauce over the salmon fillet and let it marinate for around 30 minutes.

Next, while the salmon is marinating, make the sesame sauce for the broccoli. First, toast the sesame seeds over medium heat in a pan (no oil needed) for a few minutes until slightly golden. Then, remove from the pan and set aside.
Step 4
In a small bowl, combine the mirin, vinegar, sugar, sesame oil, sweet soy sauce, garlic powder and vegetable oil. Mix well.
Step 5
Add the toasted sesame seeds to a pestle and mortar, then add the while peppercorns and grind to a powder.
Step 6
Add the ground powder to the bowl, then add the tahini and mix well. The sesame sauce is now ready.
Step 7
Next, cook the rice as per packet instructions, and cook the salmon and broccoli whilst the rice is cooking: cut the broccoli into bite size pieces and cook for around 5 minutes, until still a bit tender. To cook the salmon, heat a griddle pan, then once hot, cook the salmon fillet for a few minutes on each side.
Step 8
The dish is now ready to serve. Drain the broccoli and pour over the sesame sauce, and serve alongide some rice and salmon. Enjoy!
