Easy, healthy and delicious cauliflower florets
This is a very simple dish, with just cauliflower and some Indian spices, making for a great side dish or a main. This is suitable for both vegetarians and vegans.

Ingredients
- 1 whole cauliflower head or 500g cauliflower florets
- 2tbsp vegetable oil
- 1 thumb -size piece of ginger
- 1tsp cumin seeds
- 1tsp ground ginger
- 1 tsp garam masala
- 1tsp ground turmeric
- 1tsp sugar
- 1tsp salt
- 1/2tsp fenugreek seeds
- 1/2 tsp chili flakes
- 1/4tsp asafoetida
- some fresh coriander to garnish (optional)
We served this is a main dish, alongside some basmati rice, but you can also have this is as a side dish- perhaps with one of our other recipes such as the roasted broccoli in a mustard glaze.
Step by Step Instructions
Step 1
First, peel the ginger, and then dice. If you are using a whole cauliflower, remove the outer leaves and cut the head into bite-size florets.
Step 2
Heat the vegetable oil in a medium-sized saucepan (this needs to be big enough to hold all the cauliflower florets). Add to the vegetable oil the asafoetida, fenugreek and cumin seeds and both the diced and ground ginger. Stir well and fry on medium heat for around a minute.
Step 3
Add the cauliflower florets, salt, sugar, chilli flakes, garam masala and the turmeric.
Step 4
Mix well to ensure the spices are evenly mixed. Add 300ml of water and cover the saucepan. The water should cover some of the cauliflower but not all. Lower the heat slightly to low-medium.
Step 5
Cook the cauliflower for 15, mixing and stirring the cauliflower occasionally to ensure it is fully covered in the spices. The cauliflower florets should become yellow quickly from the turmeric.
Step 6
Check the cauliflower florets after 15 minutes- they should be cooked but not too soft and disintegrating. You might need to cook for a few minutes more depending on how big the cauliflower head was. Once cooked, add the coriander, if using, as a garnish.

The dish is then ready to serve. Enjoy!
