A juicy and flavourful mixture of lamb and spices, in courgette shells
A delicious combination of meat, onions and tomatoes makes for a tasty filling in this courgette dish. Quite easy to prepare and very hearty- this dish makes for a great dinner.

Ingredients
- 300g minced lamb
- 2 courgettes
- 1 large onion
- 1 can chopped tomatoes (400g)
- 5 cloves
- 5 allspice berries
- 2 garlic cloves
- 2tbsp olive oil
- 1/4tsp ground pepper
- 1/4tsp ground cinnamon
- 1/4tsp ground nutmeg
- 1/4tsp fenugreek seeds
- 1/4tsp ground ginger
- salt and pepper to taste
This is a simple recipe and is a healthy dinner option. We served this with just some cous cous but it can also be served with other roasted vegetables, a side salad or some potatoes.
Step by Step Instructions
Step 1
First, preheat the oven to 190 degrees C (375 degrees F). Slice the courgettes lengthways, then place in an oven dish or roasting pan. Brush the courgette with 1tbsp of the olive oil, then roast for 30 minutes.
Step 2
Whilst the courgettes are roasting, you can start to prepare the filling.
Peel, then chop the onion. Heat the remaining olive oil in a saucepan, then add the chopped onion and cook for 3 minutes on medium heat until soft. Peel and crush the garlic cloves, then add to the pan, and cook for a further 3 minutes.
Step 3
Meanwhile, into a separate saucepan, add the chopped tomatoes, alongside 300ml of water, then bring to a boil. Once boiling, reduce the heat to medium, and cook for 20 minutes. This will reduce and thicken the sauce.
Step 4
Go back to the other saucepan, add the minced lamb to the onions, mix well and cook for another 8 minutes.
Step 5
Whilst the lamb and onions are cooking, make the spice mix. In a pestle and mortar, ground the all spice berries, cloves and fenugreek seeds, and place into a bowl. Add the other spices too, then mix all the spices together.
Step 6
Add the spices to the saucepan with the onion and minced lamb, then add salt and pepper to taste, mix well. Cook for a final 5 minutes.
Step 7
By now, the courgettes should be cooked and the flesh should be soft. Remove from the oven (do not turn the oven off though), then carefully using a spoon scoop out the flesh, then discard the flesh.
Step 8
Into each scooped out courgette half, add in the lamb mixture, and pour over the tomato sauce.
Step 9
Cover with some foil, then place back into the oven and roast for 45 minutes.
Step 10
The sauce will thicken further whilst roasting, and then the dish is ready to serve. Enjoy!
