Lamb Shank Biryani

Tender lamb chunks cooked with delicious rice and spices

This recipe does take a bit of time and prep but the end result is delicious and sure to please! This is a great dish for serving at a dinner party- and we used a ninja foodi to cook it all as a one-pot dish.

Ingredients

  • 300g diced lamb
  • 2 lamb shanks
  • 3 medium sized-potatoes
  • 2tbsp vegetable oil
  • 3 cups basmati rice
  • 2 cinnamon sticks
  • 2 star anise
  • 2tsp ground cumin
  • 2tsp ground corriander
  • 2tsp ground turmeric
  • 2tsp chili powder
  • 2tsp garam masala
  • 2stp cloves
  • 2 cloves of garlic
  • 1tsp whole cumin
  • 1tbsp black peppercorns
  • 1 cup fried onions
  • 1 thumb of ginger
  • salt and pepper to taste

We used a few functions in our ninja foodi- including the sear option, and then the pressure cooker function. This makes it super easy and only requires the one pot, although the pressure cooking function takes a bit of time to build up pressure. 

Instead, you can cook it on the hob but do adjust the cooking time accordingly.

Here we used some diced lamb as well as lamb shanks- you can change the quanity of diced lamb if you like.

 

 

 

Step by Step Instructions

Step 1

First, prepare and gather all the spices, peel and slice the ginger and garlic and set aside to be used later.

Next, add the vegetable oil to the pot, and sear the lamb (both lamb shank and the diced lamb) on all sides for a few minutes. 

Step 3

Once the lamb has been seared on all sides, add the cinnamon sticks, garlic, ginger, peppercorns, star anise, whole cumin and cloves to the pan. Mix everything well together, and cook on medium heat for 5 minutes to allow the spices to infuse into the meat.

Next, add the other spices (ground cumin, ground corriander, turmeric, chili, garam masala and salt and pepper). Finally add the fried onions.  Add two cups of water and mix everything well together.

Cook this using the pressure cooking function for 3 minutes (check your pressure cooker instructions). Once cooked, give everything a stir.  

Step 6

Peel the potatoes, then chop into bite-sized pieces and add to the pot. Rinse the basmati rice, and then also add this to the pot, alongside a cup of water . Mix everything well again.

Next, pressure cook everything again for a final 3 minutes.

Step 8

The rice should now be cooked, and the meat should be tender and falling of the bone.
