Ingredients
- 2 tuna steaks (around 220g)
- 1 carrot
- 2 shallots
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 tbsp olive oil
- salt and pepper to taste
You can swap out the fresh herbs for dried herbs if preferred, and you can also add other vegetables to accompany the carrots: feel free to add green beans or turnips or other root vegetables.
Step by Step Instructions
Step 1
First, prepare the vegetables: peel and dice the carrot, and peel and chop the shallot. Set aside.
Step 2
If using whole tuna steaks, cut these into bite-sized pieces.
Heat 1tbsp of the olive oil in a frying pan, then add the tuna pieces and cook on high heat for around 4 minutes, stiring occasionally to ensure the tuna cooks on all sides.
Once cooked, remove the tuna pieces from the pan and set aside.
Step 3
Pour in the remaining olive oil, then add the shallots and cook for 5 minutes, stirring occasionally.
Step 4
Next, add the chopped carrots, the herbs and salt and pepper to taste. Mix everything, and cook for a further 15 minutes on medium heat, stirring occasionally.
Step 5
Add the tuna to the pan, add 2tbsp of water, stir and cook for a further 3 minutes to re-heat the tuna.
Step 6
The dish is then ready to serve. Enjoy!
