A hearty and delicious stew
This is a simple yet tasty stew, with chunks of cod, courgette slices and potato pieces in a passata sauce, with the olives and capers giving a bit of extra flavour.

Easy- 6 small-medium sized potatoes
- 2 cod loin (around 260g in total)
- 1 courgette
- 1 onion
- 100ml passata
- 100ml water
- 50g green pitted olives
- 30g plain flour
- 4tbsp olive oil
- 1/2tbsp capers
- salt and pepper to taste
We use just one courgette in this recipe- but feel free to use more and reduce the amount of potatoes. You can also add in celery for more flavour (however I despise celery so rarely, if ever, cook with it!).
Step by Step Instructions
Step 1
First, prep the vegetables: peel and chop the potatoes into bite-size pieces, slice the courgette and dice the onion.
Step 2
Next, par boil the potatoes for 5 minutes- these will be cooked further later on. After 5 minutes, drain and set aside.
Step 3
Meanwhile, pour the flour into a bowl, and lightly coat the courgette slices with the flour.
Step 4
Heat a quarter of the olive oil in a pan, and in batches, pan-fry the courgette slices for a few minutes on medium heat, until both sides are golden. Once golden, remove the courgettes, drain on a paper towel and set aside in a bowl. You might need to add a bit more olive oil in between batches.
Step 5
Once all the courgette slices have been cooked, then add the rest of the olive oil into the pan, and cook the diced onion for 3 minutes on medium heat. Then, add the potatoes back in, and cook for a further 3 minutes, stirring occasionally, to get the sides slightly crispy.
Step 6
Add the passata, water, olives and capers to the pan, stir everything, then cook for a further 10 minutes.
Step 7
Next, cut the cod loin into pieces- these do not need to be too small as the cod will further break down during the cooking. Add some salt and pepper to taste and cook for another 5 minutes.
Step 8
Finally, add the courgette slices back into the pan, mix everything well, cover and cook for a final 20 minutes.
Step 9
The stew is then ready to serve. Enjoy!
