Incredibly simple yet delicious next-level roast potatoes

If you are looking for a way to upgrade simple roast potatoes, this is the recipe. This is a very easy side dish, but never fails to impress when we serve this for dinner.

Ingredients

  • 7-8 medium sized Maris-piper potatoes
  • 3tbsp olive oil
  • sprig of fresh rosemary
  • sprig of  fresh thyme
  • salt and pepper to taste

We used Maris-piper potatoes in this recipe, but any floury potatoes that you would use for roasting would work well.  Using fresh herbs would be best, however you can also use dried herbs instead.

 

Step by Step Instructions

Step 1

First, preheat the oven to 200 degrees C (390 degrees F). Scrub the potatoes if there is any mud, otherwise place each potato on a wooden spoon, and make slits  along the width of each potato, of around 5mm wide. The sides of the wood spoon will stop you cutting all the way through the potato.

Step 2

Place the potatoes into an oven dish, then pour over the olive oil. Toss the potatoes to ensure the olive oil covers all sides of the potatoes.

Step 3

Place the sprigs of thyme and rosemary into the oven dish, add salt and pepper to taste, then roast for an hour.

After an hour, the potatoes should be golden and are ready to serve. Enjoy!

    I use chopsticks or skewers! I Hasselback tons of things, i.e., winter squash, summer squash, unskinned fish, apples, bananas, breads, red potatoes!!! Been doing it for 40 years!!!
