An alternative yet delicious brunch dish
For this recipe, we’ve combined fresh, home-made herby pesto with grilled courgettes, toasted almonds and some smoked salmon. This dish is easy to put together but tastes great and looks impressive!

- 2 courgettes
- 120g smoked salmon
- 2tbsp olive oil
- 20g flaked almonds
Ingredients for the pesto:
- 1 bunch parsley
- 1 bunch coriander
- handful of mint leaves
- 2tbsp pine nuts
- 2tbsp olive oil
- 1 large garlic clove
- salt and pepper to taste
This is a simple yet delicious dish, perfect for spring or summer. It is also a very light and healthy dish and is completely vegetarian.
We serve the courgettes with smoked salmon, but you also serve these as a side dish, perhaps with some beef or fish.
The pesto recipe we provide makes enough for this recipe and also at least another dish- we use it for salads, pasta etc. It keeps well for a few days in the fridge.
Step by Step Instructions
Step 1
First, halve the courgettes, and cut into slices, around 1/2 centimetre thick. Place these into a bowl, and add the 2tbsp olive oil, and mix well to ensure the slices are covered.
Step 2
Heat a griddle pan, then add the courgette slices- you might need to do this in batches. Cook on medium heat, turning occasionally until the slices are cooked. Cook for around 10 minutes.
Step 3
Whilst the courgettes are cooking, in a small pan toast the flaked almonds for a few minutes on medium heat- be careful to not burn them. Remove from heat once slightly golden and set aside.
Step 4
Next, peel and roughly chop the garlic, then add all the ingredients for the pesto into a food processor, and blend. Depending on how big your bunches of herbs are, you might need to add more olive oil to get the right consistency. Add salt and pepper to taste, then transfer to a small bowl or jar.
Step 5
The courgettes should be cooked by now-transfer the courgette slices into a bowl, then add a few tablespoons of the pesto, mix well.
Step 6
You can now plate up the dish. First, place slices of the smoked salmon on the plates, then place the courgette slices with the pesto, and finally top with the toasted almonds. Feel free to add more pesto at this stage if you like. The dish is now ready to serve. Enjoy!
