Fish and potato bake

A healthy and tasty bake with mixed fish and vegetables

This is a simple bake which doesn’t require that much prep- just a fair bit of cooking time. The vegetables and the fish you use can also be changed to suit what you have available or your preferences.

Ingredients
  • 320g mixed fish
  • 2 large potatoes (around 300g)
  • 25g Comté 
  • 3 anchovy fillets
  • 2 garlic cloves
  • 1 can chopped tomatoes (400g)
  • 1 vegetable stock cube
  • 1 onion
  • 1 red pepper
  • 1tbsp thyme leaves
  • 1tbsp olive oil
  • 1tsp white vine vinegar

We used grated Comté in this recipe, but you can also use cheddar.

We also used a fish pie mix which had cod, salmon and smoked haddock but you can change the fish as you prefer. Similarly, feel free to swap the vegetables we suggest for others, such as leek, spinach, peas etc.

We kept the amount of cheese limited to ensure the dish is healthy- but feel free to use more to get a cheesier bake if preferred!

 

 

Step by Step Instructions

Step 1

First, prepare the ingredients:  peel the potatoes, then slice relatively thinly (around 5mm in thickness), slice the onion and slice the red pepper. Peel the garlic then either finely chop it or crush using a garlic crusher/press. Finally, dice the anchovies.

Step 2

Par boil the potatoes in salted water for 5 minutes- be careful to not overcook as we want to keep the potatoes intact and not mushy.  Once the potatoes are cooked, drain and set aside.

Preheat the oven to 200 degrees C (400 degrees F).

Heat the olive oil in an oven-proof pan, then cook the onion on medium heat for 3 minutes. Then, add the garlic, stir, and cook for a further 2 minutes. Next, add the pepper and cook for a further 5 minutes (so 10 minutes in total).

Crumble in the stock cube, add the white wine vinegar, the chopped tomatoes, salt and pepper to taste. Mix everything well and cook for another 5 minutes.

Step 5

Remove from the heat, then add the fish pieces on top of the cooked vegetables.

Layer the sliced potatoes on top of the fish, scatter over the diced anchovies and the thyme leaves. Next, grate the cheese to cover the potatoes, and the dish is ready to go in the oven. Bake for 30 minutes.

The cheese should melt and be slightly golden and the dish is now ready to serve. Enjoy!
