Tender chicken in a delicious glaze
This Filipino dish is very tasty, and while it takes a bit of time to cook, the prep and the ingredients are very simple. This was our first attempt at a Filipino dish- cooked to order for someone who was craving it, having had the dish in the Philipines whilst on holiday. It certainly did not disappoint!

Ingredients
- 10 chicken thighs (bone in, skin on, around 1.7kg)
- 7 garlic cloves
- 150ml light soy sauce
- 150ml white vinegar
- 6 bay leaves
- 2 white onions
- 3tbsp brown sugar
- 2tbsp vegetable oil
- salt and pepper to taste
Feel free to use chicken drumsticks or boneless thighs if preferred.
Serve the chicken with some rice to soak up the sauce.
Step by Step Instructions
Step 1
First, prepare the ingredients: peel the garlic cloves, and peel and dice the onions. Set aside
Step 2
Combine the soy sauce, vinegar and bay leaves in a big bowl. Add in 5 garlic cloves, roughly chopped. Mix everything well together, then add the chicken, cover it with the sauce as much as possible and let marinade for at least 30 minutes.
Step 3
Heat the oil in a pan. Remove the chicken thighs from the marinade (keep the marinade for later), and cook on each side on high heat for a few minutes to sear the chicken. You migh need to do this in batches. The chicken does not need to cook all the way through but just needs to be a bit golden on both sides.
Step 4
Once the skin is golden, remove from the pan. Add the diced onion into the same pan, as well as the remaining garlic cloves, roughly chopped again. Cook until for a few minutes.
Step 5
Add the marinade into the pan, add 400ml of water and sugar, mix well and continue to cook on medium-high heat for 5 minutes. The sauce should start to thicken.
Step 6
Carefully place the chicken into the pan, then continue to cook on medium heat for 60-70 minutes. Add salt and pepper to taste. Turn half way through cooking to ensure even cooking.

The chicken will become tender and it is then ready to serve. Enjoy!
