A very simple seafood dish to put together but delicious!

- 300g cuttlefish
- 125ml white wine
- 2 onions
- 2tbsp olive oil
- 2 cloves of garlic
- 2tbsp tomato puree
- 2 bay leaves
- 3 allspice berries
- 1/2tsp of granulated sugar
- freshly ground black pepper
Just to note- you need to clean the cuttlefish first before using, and we found it helps to rinse under running water, then drained just before cooking.
Step by Step Instructions
Step 1
First, heat the olive oil in a pan.
Meanwhile, thinly slice the onions and chop the garlic.
Step 2
Once the oil is heated, add the garlic and onions, and cook for around 4-5 minutes on medium heat. The onions should become soft and translucent.
Step 3
Next, add the cuttlefish, and cook for a further 4-5 minutes, stirring occasionally.
Step 4
Meanwhile, in a small bowl combine the white wine with the tomato paste and mix well. Next, add this to the pan, alongside the allspice berries, the two bay leaves, freshly ground pepper to taste and the sugar. Stir everything well to ensure the cuttlefish are well covered in the sauce.
Step 5
Cover the pan, turn down the heat to a simmer and cook for a further40-45 minutes. Be sure to check on the pan occasionally- also you do not want the heat to be too high as you do not want the bottom to burn.
Step 6
The cuttlefish should become tender, and the sauce should have reduced a bit- the dish is then ready to serve. Enjoy!
