A very simple soup that is incredibly full of flavour
Perfect for using up leftover carrots or for a cold, wet day, this soup is great to batch-cook and reheat for lunch later on.

Ingredients
For the skewers:
- 200g dried red lentils
- 5 carrots (around 650g)
- 4 small shallots
- 1 celery stick
- 1tbsp sunflower oil
- 1/2 tsp curry powder
- 1/2 tsp garam masala
- 1/2 tsp ground corriander
- 2 vegetable stock cubes
- salt and pepper to taste
- Fresh parsley to garnish (optional)
This recipe is straight forward and mostly uses ingredients you should already have in your fridge and cupboard. It is not too spicy, but feel free to add more curry powder or extra chilli powder as per your preferences. Serve with some crusty bread or a slice or two of sourdough.
Before cooking the dried lentils, it is necessary to rinse these: place the lentils into a colander, then rinse under running water for a few minutes: the water will initially be cloudy, and then should soon start to run clear.
Step by Step Instructions
Step 1
First, peel and roughly chop the shallots, then peel and roughly chop the carrots. Finally, remove the outer ends of the celery (the celery strings), and chop. None of these need need to be too small or thin as they will be blended later.
Step 2
Heat the sunflower oil in a pan, then add the chopped shallots, the curry powder, garam masala and ground coriander, mix everything then cook on medium heat for 5 minutes.
Step 3
Next, add the celery, stir and cook for a further 5 minutes.
Step 4
Boil around 1.5 litre of water, then mix in the two stock cubes. Add this to the pan, then add in the lentils (after having rinsed them) and carrots. Mix everything, and continue to cook on medium heat for 20 minutes.
Step 5
Once the soup has cooked for 20 minutes, it is ready to be blended. Add salt and pepper to taste, mix and then, use a stick blender (look out for splashes) or a food processor- and blend until the soup is smooth.
Step 6
The soup is now ready to serve. Add some chopped parsley as a garnish (if using), then serve. Enjoy!
