Great for a healthy little lunch at home, or for a picnic, these crabstick Gimbap are delicious and very tasty

Ingredients
- 100g Sushi Rice (200g cooked)
- 4 nori leaves
- 8 crabsticks/surimi
- 1/2 carrot jullienned
- 100g fresh spinach
- 1 Egg
- 2 * 1/2 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp garlic
Notes:
This is a very simple recipe, for a very simple dish.
Whilst this recipe calls for crabstick, you can swap it for anything you like, be it cooked pork, chicken or any other type of fish. It is similar (well, pretty much the same as) to Japanese Maki although Gimbap tend to be bigger and consumed without sauce.
It’s the perfect lunchbox meal or picinic treat!
Step by Step Instructions
Step 1
Wash the rice in a saucepan with cold water a few times until the water is clear, usually about 5 to 7 times.
Set to boil on high for about 5 minutes then reduce the heat to medium and cover for another 10 or until your rice is cooked but not completely dry.
In a separate saucepan, wilt the spinach and drain. Put it in a bowl with the garlic and 1/2 tsp of sesame oil
Step 2
Meanwhile, do a light cure of salt and sesame oil with the julienned carrots and set aside for 10 minutes.
You can also cook the egg, whisked into a thin omelette at the same time.
Step 3
If you have a bamboo sushi mat, use it!
Lay a Nori sheet and spread rice up to about 2/3 of the way.
Step 3
On top of the rice an closer to you, layer a bit of the carrots, spinach, crab sticks and omelette.
Step 4
roll together, making sure you wrap all of the contents with the rice and that the outer side of the nori sheet gets onto some of the rice, this will help make sure it sticks together.
Step 5
Serve as is or with some soy sauce if you fancy
