Step by Step Instructions
Step 1
First, prepare the cherries. If using fresh cherries, remove the pips, otherwise add to a pan, alongide the sugar and lemon juice, mix well and cook on medium heat until the cherries soften and start to break down a little- this takes around 15 minutes. Once cooked, set aside to cool.
Step 2
Whilst the cherries are cooking, break up the chocolate into pieces and add to a bain marie (a pan over boiling water). Gently melt the chocolate.
Step 3
Once the chocolate has melted, remove from heat and set aside. Then, whip the double cream using a whisk- either an electric one or by hand. Whip until peaks start to form but don’t over-whip.
Step 4
Stir the whipped cream into the molten chocolate, carefully folding it in, to create chocolate mousse.
Step 5
Spoon the chocolate mouse into glasses or ramekins. Place into the fridge for at least an hour to set the mousse.
Step 6
Next, crush the oreo biscuits- either by using a mortar and pestle or rolling pin.
Step 7
Top the chocolate mousse with some crushed oreo pieces, and then spoon on some of the cherries, as well as the juice. The dessert is now ready to serve. Enjoy!
