Delicious, tender chicken in a rich tomato sauce- perfect in a slow cooker or on the hob
This is a simple yet very tasty Italian recipe, great for a mid-week dinner or even when entertaining. The recipe is very flexible and can be tweaked depending on what you have available or your preferences.

Ingredients
- 600g chicken thighs
- 3 cloves of garlic
- 2 carrots
- 2 cans of tomatoes (400g each)
- 2tbsp olive oil
- 1tbsp dried oregano
- 1 onion
- 1 celery stick
- 1 chicken stock cube
- salt and pepper to taste
The cooking time above depends on whether you cook on the hob or slow cooker. The instructions below are for a slow cooker which takes around 5 hours in total. If cooking on the hob, then the dish takes around an hour to cook.
We didn’t use too many ingredients in this recipe, but you can tweak it to add peppers, mushrooms, olives, wine- the recipe is very versatile!
We served this with barley, but the chicken can also be served with pasta or potatoes as per your preferences.
Step by Step Instructions
Step 1
First, prepare the ingredients: peel and dice the onion and carrots, then dice the celery stick. Peel, then roughly chop the garlic cloves.
Step 2
Add the olive oil into the slow cooker (or pot if cooking on the hob), then add the diced vegetables, dried oregano and mix well.
Step 3
Next, season the chicken: place onto a chopping board, pat dry on both sides, and season with salt and pepper.
Step 4
Add the two cans of chopped tomatoes to the pan. Stir everything well, then add the chicken thighs, covering with the sauce. Finally, boil around 200ml of water, and dissolve the chicken stock cube when boiled. Pour this over the chicken.
Step 5
If cooking in the slow cooker, cook for 5 hours, on the high heat setting. If on the hob, cover, and simmer for around an hour. In both instances, the chicken should be tender when cooked. Season with salt and pepper to taste.
Step 6
The dish is now ready to serve. Sprinkle over fresh parsley. Enjoy!
