Beef-filled aubergine rolls

Delicious bites,  full of flavour

This is an easy and tasty recipe, full of flavour and quick to put together.  We served these aubergine rolls as a main but you can do smaller portions as a starter.

Ingredients

  • 250g minced beef
  • 1 medium sized aubergine
  • 1 red onion
  • 1 sweet red pepper
  • 2tbsp vegetable oil
  • 1tbsp garlic powder
  • 1tbsp dried oregano
  • 1tbsp dried coriander
  • 1tbsp sweet paprika
  • 1tbsp cumin powder
  • salt and papper to taste

We served the aubergine rolls alongside some lambs lettuce, but you could also serve it with some pitta bread, rice or a different type of salad.

 

Step by Step Instructions

Step 1

First, prepare the vegetables: slice the aubergine thinly lengthways, peel and dice the onion, and dice the pepper.

Step 2

Heat some of the vegetable oil in a frying pan, and in batches, gently lightly cook the aubergine slices on each side for a few minutes until they start to get soft. Add more oil if needed. The slices do not need to be cooked all the way through as they will be cooked in the oven later.

Combine all the spices in a bowl, then add the beef, diced onion and pepper, and mix everything well.

Preheat the oven to 200 degrees C (390 degrees F).

Next, start to put together the aubergine rolls: lay the slice, and top it with a thin layer of the beef filling, then roll it all together. Use a skewer to hold the rolls together, and place into a roasting tray.

Cook the skewers in the oven for around 20 minutes.

Step 6

The aubergine rolls are now ready to serve. Enjoy!
