A simple yet delicious brunch dish!
This dish is sure to impress and makes a for a simple brunch dish. Whilst the pancakes go really well with salmon, it also works similarly well with other toppings.

Ingredients
- 80g self raising flour
- 1 egg
- 100ml buttermilk
- 50ml milk
- 1tsp sugar
- 1tbsp butter
- 3tsp chives (fresh if possible)
- 1/2tsp baking powder
- 2tbsp mustard
- 250g smoked salmon
- 1 lemon (to serve)
- Salt and pepper
Step by Step Instructions
Step 1
First- make the batter: into a bowl, pour the flour, baking powder, buttermilk, sugar, salt and pepper, and 2tbsp of the chives. Mix well.
Step 2
Seperate the egg yolk from the egg white, and add the egg yolk to the batter and mix well, then slowly add the milk whilst continuing to mix the batter.
Step 3
Whisk the egg white in a seperate bowl until white peaks are formed- this should take around 5 minutes if using an electric whisk, a bit longer if doing by hand. Carefully and gently fold into the batter mix. Place into the fridge for around 30 minutes.
Step 4
Remove the batter from the fridge. Add some of the butter to a pan on a medium heat. Once melted, give the batter a final mix, then using a ladle, pour some of the batter into the pan, pouring circles but making sure they do not overlap.
Step 5
Cook the pancakes for a few minutes on each side, until each side becomes golden brown. Repeat for the remaining batter, adding more batter as necessary.
Step 6
Once the pancakes are all cooked, top each with some of the mustard, and add smoked salmon slices. Top with any remaining chives, and serve with a wedge of lemon. Enjoy!
