Lentils with chorizo

Quick smoky lentils with chorizo

This is a delicious, hearty dish- simply lentils topped with chorizo. This makes for a very satisfying dinner, and can even be prepped in advance.  By using a pressure cooker here, you can also save quite a bit of time- and no need to soak the lentils in advance!

Ingredients

  • 400g cooking chorizo
  • 2 carrots
  • 2 bay leaves
  • 2 garlic cloves
  • 1 onion
  • 1 cup dried green lentils
  • 1 chicken stock cube
  • 2tbsp olive oil
  • 2tbsp smoked paprika
  • salt and pepper to taste

Lentils make for a very versatile base. You can swap the chorizo for grilled chicken or even some seafood such as prawns. Alternatively, the recipe can be made vegetarian by using a vegetable stock cube and either topping the lentils with tofu or grilled vegetables.

We used a pressure cooker for the lentils- so did not need to pre-soak them. Otherwise, soak for at least 2 hours prior to using if you are cooking this on the hob and adjust the cooking times accordingly.  As pressure cookers vary- do check the manual for exact cooking times, but we found 10 minutes to work best for us.

 

 

 

Step by Step Instructions

Step 1

First, prepare the ingredients: peel and roughly chop the garlic cloves, peel and dice the onion, and then peel and slice the carrots.

Step 2

Add 1tbsp of the olive oil into a pan on medium heat, then add the chopped onion and garlic.

Stir and cook for 5 minutes,  then add the canned plum tomatoes and cook for a further 5 minutes.

Next, allow to cool for a few minutes.

Once slightly cooled, blend the tomatoes- either by using a stick blender or by adding to a food proccessor. If using a stick blender- look out for splashes. Set the sauce aside once blended.

Make the stock up by combining the stock cube with 1 litre of boiling water.

Step 5

Into a pressure cooker, add the dried lentils, chopped carrots, stock cube, the bay leaves, the tomato sauce, paprika and salt and pepper to taste, mix well. Cook on high for 10 minutes.

If cooking on the hob, first cook the carrots in the remaining olive oil for 5 minutes, then add the remaining ingredients, mix and cook for 20 minutes.

Whilst the lentils were cooking, you can cook the chorizo: cook in a pan (no need for oil) on medium-high heat for around 6 minutes, until the chorizo browns. Turn occasionally to ensure even cooking.

The lentils should be cooked by now, and thickened, and are ready to serve. Remove the bay leaves, plate the lentils, and top with chorizo. Enjoy!
