Ingredients
- 1/2 Reblochon de Savoie A.O.P.
- 300g Potatoes
- 200g Smoked bacon lardons
- 1/2 tbsp salt
- 1/2 tbsp pepper
- 3 tbsp vegetable oil
- 1 cup white wine
- 1 medium onion
- handful of grated cheese such as emmental
Ideally, you want to get a Reblochon from your cheesemonger, whether in person or online. It needs to be taken out the fridge preferably 30min before you’re going to put it into the over, just to make sure it will be at room temperature beforehand.
Step by Step Instructions
Step 1
Cut the potatoes into 2cm cubes and chop onion finely.
Step 2
Butter a pan and let it melt until adding the chopped onions. You want them to get translucent before adding the lardons.
Once things have started to render a little you can add the potatoes and keep on medium heat for about 15/20 minutes.
Step 3
Once the potatoes are starting to cook through halfway, deglaze the whole mixture with a generous serving of white wine to impart it with more flavour.
Step 3
Meanwhile, cut the Reblochon cheese in half and then cut sideways as seen in the picture.
Step 4
Once the potatoes, lardons and onions have cooked, lay them into a baking dish, preferrably a round one, but otherwise a rectangular one will do.
Step 5
Sprinkle with grated cheese (in lieu of even more Reblochon cheese, but feel free to do that if you fancy!) and place the cut Reblochon, crust facing up.
Step 6
Place in the oven for about 15 to 20 minutes on 220C or until the cheese has melted.
Step 7
Finished cooking and ready to enjoy!
