Garlic Chicken

Very simple, crisp and tender chunks of chicken

This is a delicious way to cook up some chicken, inspired by a Vietnamese recipe (but slightly simpler and quicker!). This makes for a great mid-week dinner.

Ingredients

  • 400g chicken thigh fillets
  • 100g shallots
  • 3tbsp sesame oil
  • 2tbsp minced garlic
  • 2tbsp sugar
  • 1tbsp light soy sauce
  • 1tbsp fish sauce
  • 1tbsp vegetable oil
  • 1tsp salt
  • 1tsp ground black pepper
  • handful of thai basil leaves (optional, to garnish)

The prep time includes an hour’s marinating in the fridge- but you can also marinate for longer or overnight to get stronger flavours.

Ideally use some boneless thicken thighs for this recipe, but you can also use chicken drumsticks or breast fillets- just adjust the cooking time accordingly.

We served this with some jasmine rice-   but you can also serve this with other dishes such as tofu spring rolls, or classic Vietnamese spring rolls as part of a tasting menu.

Step by Step Instructions

Step 1

First, prepare the ingredients: peel and slice the shallots, and cut the thicken thighs in half.

Step 2

Next, make the marinade: into a bowl, add the sliced shallots, soy sauce, sesame oil, minced garlic, sugar, fish sauce and salt and pepper.

Mix the marinade ingredients, then add the chicken pieces and mix again, ensuring the marinade covers the chicken well. Cover, then refrigerate for at least an hour.

Step 4

Once the chicken has marinated, heat the vegetable oil in a pan on medium-high heat, then fry the chicken for around 10-15 minutes. Turn the chicken occasionally, to ensure even cooking and to make sure the chicken browns on all sides. 

Step 5

The chicken is then ready to serve. If using Thai basil leaves, roughly chop these up then garnish. Enjoy!
