Simple yet delicious traybake, full of flavour
This recipe makes for a great mid-week dinner, as there is very little prep, and the ingredients are rather basic and straightforward.

- 2 chicken breasts
- 500g new potatoes
- 200g cherry tomatoes
- 1 red onion
- 4tbsp olive oil
- 2tsp sweet paprika
- 1tbsp dried thyme
- 1tbsp Dijon mustard
- 1tsp lemon juice
- Salt and pepper to taste
The chicken breasts can be substituted for thighs or drumsticks if you prefer, just adjust the cooking time accordingly. This dish would also work well with bell peppers.
Step by Step Instructions
Step 1
First, prepare the marinade: in a bowl, combine 3tbsp of the olive oil, sweet paprika, Dijon mustard, thyme and lemon juice. Mix well, then add in the chicken and make sure it is covered in the marinade. Set aside.
Step 2
Next, parboil the potatoes. Depending on the size, you might need to cut them in half. Then drain, and set aside. Slice the red onion, and also set aside. Preheat the oven to 200 degrees C (400 degrees F).
Step 3
Pour the remaining olive oil into a dish/tray, then add the potatoes, red onion slices, and mix to ensure they are covered in the oil.
Step 4
Place the chicken on top of the potatoes, add salt and pepper to taste, then put into the oven.
Step 5
Once the chicken and potatoes have cooked for 30 minutes, add the cherry tomatoes to the dish, then cook for another 30 minutes.
Step 6
The chicken will be cooked after an hour in the oven, and the dish is now ready to serve. Enjoy!
