This sweet and slightly spicy paste goes perfectly with Manchego cheese and is a great appetiser!
This recipe makes for a perfect nibble or tapas dish- and the paste is very quick and easy to prepare- there is no cooking to do at all- and is just delicious!

Ingredients
- 6 Pimiento piquillos peppers
- 1 clove of garlic
- 1tbsp olive oil
- crackers (or toast)
- Manchego cheese
- 1 pack fresh chives
This recipe makes another for a few crackers per person. Instead of using Manchego cheese, you can top the crackers with roasted vegetables, anchovies- the paste is very versatile and goes well with almost anything!
If you don’t have a food processor or blender, you can make the paste using a pestle and mortar instead.

First, roughly chop the peppers.
Step 2
Next, peel and roughly chop the garlic. Place this and the chopped peppers into a blender, add the olive oil and whizz until smooth. Transfer the paste into a bowl or jar.
Step 3
Next, you can assemble the crackers (or toast if using that instead). Onto each one, spoon on some of the paste, then a slice of the Manchego cheese. Top with some freshly chopped chives.

The crackers are now ready to serve. Enjoy!
