A very straightforward yet tasty cake!
This is a very simple recipe, with only a few ingredients and nothing too fancy. Makes a great cake for afternoon tea or a picnic!

- 400g self raising flour + a bit extra for dusting
- 300g caster sugar
- 140g butter + a bit extra for greasing
- 4 eggs
- 2 oranges
- 4btsp icing sugar (optional)
We used oranges in this recipe, however you can also use lemons or tangerines instead.
You can also add orange icing to the cake- to make this, combine 25g of softened butter, 200g of icing sugar, 1tbsp of orange zest in a bowl. Mix well, and then spread the icing over the cake once the cake is baked
Step by Step Instructions
Step 1
First, grease a 10-inch cake tin with some butter, and sprinkle on some flour. Set aside.
Take the butter out of the fridge, cube the butter and then let it sit at room temperature for a bit to soften.
Step 2
Combine in a bowl the flour, sugar and four eggs. Zest the two oranges- there should be around 2 tablespoons of zest
Step 3
Add to the bowl the zest, alongside the cubbed butter. Juice the orange, then add this to the bowl also.
Step 4
Preheat the oven to 180 degrees C (350 degrees F).
Step 5
Mix the ingredients with an electric mixer for 5 minutes or so, until the ingredients are well incorporated. It may be necessary to scape the sides of the bowl half way through.
Step 6
Pour the batter into the cake tin, then bake in the oven for an hour.
Step 7
The cake should be golden. Let it rest for 5 minutes. If you are using icing sugar, dust this over the top and then the cake is ready to serve. Enjoy!
