Healthy, simple and very quick to put together!
This dish is perfect for a summer’s day- either for lunch and dinner. It doesn’t require too many ingredients or that much prep- and the end result is delicious!

Easy- 2 sea bass fillets
- 5 cherry tomatoes
- 1 can butter beans (400g)
- 1/2 onion
- 1/2 pack of fresh parsley
- 2tbsp olive oil
- 1tbsp lemon juice
- freshly ground black pepper
We used cherry tomatoes in this recipe as they tend to have more flavour than the standard salad tomatoes- but you can also use 1 or 2 beefsteak tomatoes instead.
Using canned butter beans saves on soaking time. Alternatively you can use dried butter beans- but be sure to soak and adjust the cooking time accordingly.
Step by Step Instructions
Step 1
First, prepare the vegetables: dice the onion, chop the cherry tomatoes and chop the parsley.
Step 2
Next, heat 1tbsp of the olive oil in a pan, and on medium heat, cook the sea bass fillets for 4-5 minutes (after seasoning with salt and pepper), turning half way through to make sure both sides are cooked.
Step 3
Transfer the sea bass to a plate.
Step 4
Next, add the rest of the olive oil to the pan, add the onions, and cook for 3 minutes on medium heat, stirring occasionally.
Step 5
Add the chopped cherry tomatoes to the pan. Drain 3/4 of the water from the the butter beans, then add the rest and the beans to the pan, add salt and pepper to taste, add the lemon juice, mix well and cook for 5 minutes on medium-high heat.
Step 6
Finally, sprinkle over the chopped parsley and then place the sea bass fillets back into the pan on top of the butter beans to just heat the fish up again. Cook for 2 more minutes.
Step 7
The dish is now ready to serve. Enjoy!
