Red Cabbage Slaw

Simple yet delicious side dish

This is a great way to use red cabbage in a very straight forward side dish. No cooking is needed- the cabbage simply marinates and after some time becomes soft and tender, and is ready to serve.

Ingredients

 

  • Half a red cabbage
  • 2 oranges
  • 1 red onion
  • 1tbsp honey
  • 1/4 pack of fresh coriander
  • 60ml rice wine vinegar
  • 60ml sunflower oil
  • salt and pepper to taste

This can be kept in the fridge for a few days and stays perfectly fresh. 

We served this as a side dish but this also works great in a tortilla wrap with  some grilled vegetables, meat or fish as a topping- check out our Mexican Crayfish for Tacos recipe for inspiration!

 

 

Step by Step Instructions

Step 1

First, prep the vegetables- finely chop the cabbage, and slice the red onion. Place both in a bowl and set aside.

Next, you need to put together the marinade. In a small bowl, mix the rice wine vinegar, honey and sunflower oil. Squeeze the juice from the oranges, and add this to the bowl. Mix everything together.

Pour the marinade over the cabbage and red onion, and mix well. Next, add salt and pepper to taste.

Chop the fresh coriander, add to the bowl and mix everything well.

The red cabbage now needs to just sit and marinade- we left this for around 30 minutes at room temperature, but feel free to leave for longer to soften the cabbage even more. Around every 10/15 minutes, mix the cabbage to distribute the marinade around.

Step 6

After around 30 minutes, the cabbage should be soft and well marinated- and the dish is  now ready to serve. Enjoy!
