Wontons in chilli oil

Probably the easiest dumplings to make!

Out of all the Dim Sum recipes you could find, Wontons are the easiest to tackle. It helps that you would usually buy the wrappers ready made as well!

Ingredients

12 Wonton wrappers (1 pack comes with approx 34 per pack)

  • 150g Pork mince (preferably high in fat)
  • 1 Egg
  • 1 tsp shaoxing wine
  • 1 tsp sesame oil
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 2 spring onions, chopped
  • 20g ginger, finely chopped
  • 10g Chinese chive (or alternatively, chives and a garlic clove), chopped

To serve:

  • Chilli oil
  • sliced spring onion
  • light soy sauce
  • vegetable or pork broth (to cook)

Note: It’s difficult to make an exact amount for 2 but Wontons freeze really well and so this recipes should yield about 30 to 34 wontons

Step by Step Instructions

Step 1

In a bowl, mix all the ingredients together, once everything is homegenous, you can add a bit of water or stock (completely optional) to the mixture to make it a bit more springy. This will also help bulk up the filling without adding any other ingredient and should give you a wonton that’s not too dry once cooked.

Step 2

Get a small cup with water in it.

Place a spoonful of the filling in the middle of a wrapper, dip your finger in water and humidify the wrapper around the filling.

The easiest way is to put the wrapper with the filling in your hand and closing it off like the picture below

Step 3

 Once you’ve finished wrapping all the wontons, boil a saucepan with water or stock and cook the wontons until they float to the surface. Lay them on a shallow plate and top with the chilli oil, soy sauce and sliced spring onion!
